 • Vineyards are situated on stepped, terraced land from the lieu-dit, Les Pallières, located around the winery and cellars (at 250 meters in altitude)

• Traditional fermentation lasts 25-30 days in temperature-controlled cement cuves and wooden vats

• Wine ages in cuves for 10 months, then in foudres for 7-9 months

• Wine is bottled unfiltered and is released two years after the harvest

• Finished cuvée showcases the vineyard parcels around the domaine with the oldest vines—with the emphasis on freshness and extravagant cornucopian fruit

Even better is the 2007 Gigondas Les Racines Vieilles Vignes. Its dense ruby/purple hue is accompanied by an extraordinary bouquet of black raspberries, kirsch, licorice, crushed rocks, and flowers. Full-bodied with sensational texture, purity, and length as well as remarkable elegance and freshness, this stunning Gigondas can be enjoyed over the next 15-20 years. Bravo! Partners Daniel Brunier and Kermit Lynch impeccably run this estate. I should also give a nod to Kermit Lynch’s latest musical endeavor, his brilliant CD called Man’s Temptation, which I highly recommend (particularly the song Gare de Lyon). Les Pallieres’ 2008s are two of the finest Gigondas I tasted in what is a very mediocre vintage for that appellation.

Very lush, with velvety-textured fig, currant paste and melted red licorice notes that glide along, while hints of Black Forest cake and hoisin sauce weave in and out. Not as dense as the Terrasse du Diable, but the range is there for cellaring. Grenache, Syrah, Cinsault and Clairette. Drink now through 2014. 4,580 cases made. –JM
